In our lineup of chili oils and crisps, KariKari is the crispiest. In fact, Kari means crispy in Japanese, and the jar is chock-full of crispy garlic slices along with bits of peanut, fermented soybean, shallot and chili, with very little additional oil. We use this crisp not so much in cooking, but as a crunchy, super-umami condiment. It is quite moreish and is our favorite of the American-made chili crisps.
Wife-and-husband makers Ruby Sparks and Rob Griset craft this chili crisp in Seattle, inspired by rayu, the chili crisp favored by the Japanese side of Ruby's family.
